Two specifications decide whether a fruit plant ever produces for you: chill hours and pollination. A variety that needs 800 winter chill hours will leaf out in a mild climate and never set fruit, and many apples, pears, blueberries and sweet cherries need a second compatible variety flowering at the same time.

Rootstock sets final size on tree fruit — dwarf, semi-dwarf or standard — and therefore how much ladder work you sign up for. Dwarf trees fruit sooner but need permanent staking.

Check your USDA zone and the variety's chill requirement before ordering, and plant bare-root stock while it is dormant. Most fruit takes two to four seasons to produce meaningfully; the first year is roots.
